This recipe (Via Minimalist Baker) is a great meat alternative if you're trying to eat a more plant-based diet! Ingredients: 1 cup quinoa, 1 cup vegetable broth, 3/4 cup water, 1/2 cup salsa, 1 Tbsp nutritional yeast, 2 tsp ground cumin, 2 tsp ground chili powder, 1/2 tsp garlic powder, 1/2 tsp each sea salt and black pepper, and 1 Tbsp olive or avocado oil.

Who needs taco shells! Slice in half and scoop out zucchini squash to make "boat" for your taco filling.
