24 waffle style pretzels (pretzel twists can be used instead!)
1⁄2 cup dark chocolate, melted
1 bag of mini marshmallows
graham crackers, crushed, for garnish
Directions
Pre-heat oven to 350 ° F.
In a large mixing bowl, combine the coconut flour, protein powder, peanut butter and mix well.
Mixture should be thick and silghtly wet.
Arrange your pretzels in a single layer on the baking sheet.
Next, place the marshmallows on top.
Bake for 3 minutes or until the marshmallows puff and are lightly golden.
Use a small ice cream scoop or a large rounded teaspoon to roll protein mixture into balls. Place one ball of the filling on top of each cooked marshmallow prepared on the baking sheet. Once all balls are rolled, place another pretzel on top and gently press down to sandwich the protein ball.
Now, dip sandwiches generously in melted dark chocolate.
To finish the s’mores bites, sprinkle crushed graham crackers before the chocolate sets.
