Ingredients

1 cup oat flour

1 1/2 scoops SFH Vanilla Plant Protein

1/2 tsp baking powder

1 tsp cinnamon
-
2 tbsp coconut sugar
-
3-4 tbsp non-dairy milk
-
3 medium bananas, mashed
-
1/4 cup rolled oats
-
2 tbsp coconut sugar
-
1 tbsp water
Glaze
Directions
Preheat the oven to 350°F.
Add dry ingredients in a mixing bowl and mix until well combined.
Add 3 tbsp non-dairy milk and mashed bananas. Mix until a thick batter appears.
To make glaze, add rolled oats, coconut sugar, and water in a small bowl. Set aside.
Divide the batter into 8 muffin tins. Add glaze on top. Bake for 30 to 35 minutes and test doneness by inserting a toothpick in the center of one of the muffins, it should come out clean.
Remove from the oven and let it cool in the pan for 5 minutes. Once ready, enjoy!
